Many who are lactose intolerant are not severely so, as I am. Those folks may not have to be concerned about eating foods that contain small amounts of lactose, only about eating too much of those foods. Everyones intolerance varies. For instance, if I ingest even a single teaspoon of milk, well, the Hindenberg comes to mind. Lactose -free milk, by the way is actually real milk with the lactase enzyme added to it to break down the lactose. The ONLY difference in taste is that lactose-reduced milk is slightly sweeter, as the lactose is broken down into simpler, more apparent-to-the-taste sugars.Lactose-reduced milk is actually excellent for cereal & cooking, and believe it or not, lactose-reduced milk is easier to digest & therefore better for you.
